Lemon Prawn Pan Fry


2tbsp oil
1 red pepper de-seeded and sliced into strips
2 courgettes sliced
200g/7oz peeled prawns, thawed if frozen
1 garlic clove chopped
110g/4oz frozen peas
1 lemon, juice and zest
small bunch fresh parsley, chopped
salt and pepper
cooked noodles to srve

Heat the oil in a wok or frying pan. Add the red pepper and courgette. Cook for 3 minutes stirring occasionally until just tender
Add the prawns to the pan with the garlic and peas. Cook stirring for 1 minute
Sprinkle over the lemon zest and parsley and season
Serve with rice or noodles
