Stuffed Mushrooms

 

Serves 4

Eight large cup or small flat mushrooms
1 tbsp Olive oil
Flour
4 Rashers streaky bacon, diced
1 Garlic clove, crushed
3 Spring onions, sliced
1.1/2ozs Fresh brown breadcrumbs
2.3/4ozsFeta cheese, diced
1 tbsp Chopped coriander
Salt & pepper

Method:

Heat the oven to 200C/400F/Gas mark 6

Remove mushroom stalks and chop them up roughly. Brush mushrooms with oil and place on a baking sheet.

Fry the bacon, garlic and stalks in the oil for two to three minutes until golden and cooked through and stir for one minute.

Add the feta, coriander, salt and pepper.

Spoon into the mushrooms.

Bake for 20 - 25 minutes until bubbling and golden brown.
