SHRIMP MASALA


1kg Boiled and peeled shrimps
2 cups Coconut milk
2 Green chillies
1/2tsp Ground coriander
1/2tsp Cumin
1/2tsp Turmeric
2 medium Onions
2tbsp vinegar/lime juice
1tbsp ginger/garlic pasts
Salt to taste
Fresh coriander leaves for garnish

Finely chop the onions then fry until transparent

Add ginger-garlic paste, coriander, cumin, turmeric and mix well. Then add cocnut milk, green chillies, vinegar/lime juice

Bring to the boil then add shrimps and boil again

Add salt and garnish with fresh corriander leaves

CAUTION

Shrimps are naturally tender and juicy. Overcooking toughens them and destroys the natural mositure, vitamins and flavour
